Ingredients:

  •  
    eggs 
  • 1/8 
    cups 
    bell pepper (green or red) 
  • 1/8 
    cups 
    bacon (diced) 
  • 1/8 
    cups 
    tomato (diced) 
  • cups 
    shredded mozarella cheese 
  • tbsp 
    vegetable oil 

Instructions:

Chop vegetables and break up or chop the bacon. Crack the eggs, whisk or beat and combine all of the ingredients to taste. Pour into a skillet (preheated on med-high, then oiled) in an even layer and let cook until almost all of the liquid has hardened. Carefully flip with a spatula to let the other side finish cooking. Enjoy!
