Ingredients:

  • 2.5 
    cups 
    all-purpose flour 
  • tsp 
    leavening agents, baking powder, double-acting, sodium aluminum sulfate 
  • tsp 
    ground cinnamon 
  • .5 
    tsp 
    ground nutmeg 
  • .5 
    tsp 
    ground cloves 
  • .5 
    tsp 
    salt, table 
  • .5 
    cups 
    butter, without salt 
  • 1.5 
    cups 
    sugars, granulated 
  • cups 
    pumpkin puree 
  •  
    egg 
  • tsp 
    vanilla extract 

Instructions:

1. Preheat oven to 350 degrees2. Grease cookie sheet3. Combine flour, baking powder, baking soda, cinnamon, nutmeg cloves and salt; set aside4. In a medium bowl, cream together butter and sugar. Add pumpkin, egg and vanilla and beat until creamy. Mix in dry ingredients5. Drop on cookie sheet by tablespoonfuls and flatten slightly.6. Bake for 15 - 20 minutes. remove from oven and place on cooling rack. 7. (optional) Once the cookies have cooled, smear cream cheese frosting on the top and sprinkle cinnamon. Cookies should be stored in a cool, dry location. If you intend to keep them for longer than a week, skip the frosting and frost as you go. Cookies also freeze well.
