Summertime Bruschetta Recipe

Ingredients

4ripe plum tomatoes, finely diced

1tbspfinely minced garlic

1/4cupscoarsely chopped fresh basil

2tbspfinely chopped Italian parsely

2tsplemon juice
-
1pinchcrushed red pepper flakes

1pinchsalt
-
1pinchfreshly ground black pepper
-
81/4 in slices French or Italian bread

2cloves garlic, halved
Instructions
In a large mixing bowl, combine the tomato, minced garlic, basil, parsley, lemon juice, red pepper flakes and salt and pepper. Toss well and set aside for at least 3 hours. Just before serving, grill or toast the bread and rub one side with garlic. Place a dollop of the tomato mixture on top of each one.
