Banana Bread Recipe

Ingredients

1/2cupsbutter or oil (canola, soybean, grapeseed, etc.)

2 1/3cupsmashed, over-ripe bananas (3-4)

1 1/4cupsbrown sugar

2beaten eggs
-
1/4tspsalt
-
2cupsall purpose flour
-
1tspbaking soda
-
1/2cupschopped walnuts or pecans

3/4cupsblueberries (optional)
Instructions
- Preheat oven to 325 degrees F (175 degrees C).
- Lightly grease a 9x5 inch loaf pan.
- In a large bowl, melt the butter and cream together with the butter and brown sugar. Stir in eggs and salt until well blended.
- On top of the wet mixture, combine flour, baking soda and salt before mixing with the wet (don't overmix).
- Fold in chopped pecans and optional mixins (blueberries, white chocolate chips, etc.).
- Pour batter into prepared loaf pan.
- Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
Note: if using oil instead of butter, reduce to1/3 cup, optionally adding 1-2 tbsp of water or milk.
