Spicy Tomato and Sausage Lasagna Recipe

Ingredients

1lblean ground turkey

1cupsonion, coarsely chopped

2tbspfinely minced garlic

2tbspbeef broth

1tsppaprika

1/4tspcayenne

1/4tspcrushed red pepper flakes

1 1/2cupscottage cheese
-
1cupsplain yogurt
-
1/8tspgrated nutmeg
-
1pinchsalt
-
1pinchfresh ground black pepper

4cupstomato sauce
-
3tbsptomato paste
-
9cooked, drained lasagna noodles
-
2cupsfirmly packed, coarsely chopped fresh spinach
-
3tbspfinely minced fresh oregano
-
1/2cupsfinely minced fresh basil
-
2cupsgrated mozzarella cheese
Instructions
- Preheat the oven to 350 degrees F.
- Lightly spray a shallow 9 x 13 inch baking dish with olive oil spray.
- In a skillet, cook the turkey, onion, garlic and broth over meium heat for about 5 minutes, until the turkey is lightly browned. Season with paprika, cayenne and red pepper flakes. Set aside.
- In a blender, process the cottage cheese and yogurt until smooth. Season with nutmeg and salt and pepper. Set aside.
- In a saucepan, cook the tomato sauce and tomato paste over medium heat, uncovered for 15 to 18 minutes, stirring until thick and smooth. Add the turkey mixture and stir to blend.
- Spread about 1/4 cup sauce in the baking dish and top with 3 noodles. Top with a third of the cottage cheese mixture and a third of the spinach, and sprinkle with a third of the herbs, 1/2 cup of mozzarella and a third of the remaining sauce. Lay 3 more noodles on top. Repeat the layers twice more, ending with mozzarella on top.
- Bake for 1 hour, until the sauce bubbles and the cheese begins to brown. Cool for 15 to 20 minutes before serving.
