Banana Oat Breakfast Cookie
Preheat over to 350 degrees. Lightly coat two cookie sheets with cooking spray; set aside. In a large bowl, stir together banana, peanut butter, honey and vanilla. In a small bowl, combine oats, flour, milk powder, cinnamon and baking soda. Stir the oat mixture into the banana mixture until combined. Stir in dried cranberries. Using a 1/4 cup measure, drop mounds of dough 3 inches apart on prepared baking sheets. With a thin metal or small plastic spatula dipped in water, flatten and spread each mound of dough to a 2 3/4 inch round, about 1/2 inch thick. In a medium bowl, beat egg. Add sugar, oil, and milk; mix well and set aside.In large bowl, sift together flour, baking powder, and salt. Preheat oven to 375F. Mix the dry ingredients in a bowl and add the blueberries. In a measuring cup or bowl mix the egg and 3/8 cup milk and add to the dry ingredients. Mix until dough is formed and roll out a circle about one inch thick. Using a pizza cutter, cut into triangles. Transfer to an oiled baking sheet and bake for 10 to 12 minutes, or until just done.

1. In a medium bowl, mix together the blue cornmeal, salt and sugar. Stir in the boiling water until all of the ingredients are wet. Cover, and let stand for a few minutes. 2.
